Smoothie Sunday & How to Cut a Pineapple (the Thai Way)

Happy Sunday! We're spending the day lounging around (as usual) and hoping it will be a long time before Monday comes (also as usual). And going crazy with the new blender our roommates brought home last week. So today's post is on how to put some yummy in your tummy without racking up the calories!

Also, if you didn't know, yours truly is actually a hapa*/mestiza**/half-breed***/luk kreung**** (all of the preceding meaning "half-Asian", or more specifically "half-Thai"). Thailand has lots of yummy pineapple, which means they also have their own special way to cut pineapples (none of the waste of American-style pineapple rings and none of those pokey eyes!), which my mommy taught me and which I will teach you now.

(I apologize in advance for the psychedelic colors to come.)

So, step by step:
Steps 1-2 Cut the bottoms and tops off the pineapple and slice the skin off. Don't worry about slicing deep to cut off the eyes, we'll cover that in a moment.
Step 3 Notice how the eyes all line up in a diagonal pattern around the pineapple. On each flat surface (where you sliced off the skin), cut little wedges around the eyes - easy peasy!
Steps 4-5 Cut the pineapple into quarters length-wise.
Step 6 Cut off the inner corners of the quarter-pieces. These are good and juicy to chew on but are often too fibrous and tough to eat!
Step 7 Slice those quarters up and voilà! Ready to eat, or...
Step 8 You can make a smoothie!

We opted for pineapple-mint, sweetened with a little honey if you'd like (although we found it was just as good without as with!). Pretty much the definition of delicious & nutritious! And now I'm off to wash my hair. Enjoy the rest of your Sunday and look forward to a new Creature Feature tomorrow!
